When I eat chicken, I go for the white-meat parts, but I know many people prefer the dark meat. The white meat is less tasty, but it’s healthier. In Pepper & Peppers’ Iberian Chicken, however, the whole chicken is superb. The breast was so juicy and savory, I was happy to give away the legs and wings to the rest of the gang. And the marinade!
